Mini Peach Pies

Next week will be Labor Day and the end of another fabulous summer. I thought it fitting to bid farewell to my favorite summer fruit by making simple, mini peach pies using LivyLu’s aluminum casting large mold. Mini Peach Pies

  • 2-3 medium to large ripe peaches
  • 2- 9″ pie crust sheets – covers 6 mold circles
  • light brown sugar
  • cinnamon
  • butter

Roll out a sheet of thawed pie crust and lay across the top of LivyLu’s aluminum baking mold on a baking sheet.  Place diced peaches into each mold until bottom is filled. Add a 1/4 teaspoon of  light brown sugar, a sprinkle of cinnamon and a dot of butter on top of each mound of peaches.

Take the 2nd sheet of thawed pie crust and lay across the peaches. Use a butter knife and cut across the rim of each individual mold until all are separated. Roll the pie crust away from the edge on each individual mold and crimp with a fork. Prick the top of each with a fork to let the steam escape.  Add a dot of butter on top for browning and place in the oven. Bake at 350 degrees for 25-30 minutes until golden brown.

Note: Double the recipe to cover all 12 individual mold circles.

This recipe calls for a double yum, yum !! 🙂
