Mini 2″ Apple Pies

The crisp air of fall brings to mind the aroma and comforting taste of a warm apple pie. I could probably eat a whole pie all by myself in one sitting. 🙂 love the taste so much. To curb my impulse, I decided to create 2 inch mini pies using my LivyLu’s silicone mold.  I freeze the individual pies and heat-up one or two when I have the urge for a taste of warm apple pie.  Yum!!

Recipe:

  • 1-2 large apples – I like Gala Apples the best
  • 2 frozen 9 inch rolled pie crust – thawed
  • Roll out 1 pie crust onto the LivyLu’s medium silicone or aluminum mold
  • Cut up apples into 1/4 inch cubes and place a handful into each pie crust circle
  • Place a 1/2 teaspoon of light brown sugar over each apple mound
  • Sprinkle each mound with Cinnamon
  • Place a 1/4 tab of butter onto each mound
  • Roll out 2nd pie crust and place on top of apple mounds
  • Cut pie crust into pie crust creating individual squares
  • Form each square into an individual pie while keeping each pie in its individual mold
  • Bake at 350 degrees for 25-30 minutes until each pie is golden brown

Serve warm with a dollop of whip cream or vanilla ice cream. Yum, Yum!
