Trucks, Trucks, & more Trucks

My grandson George turned 3 today. 🙂 Like most little boys he is obsessed with anything truck, backhoe, dump truck, fire engine or transporter related. So, of course his birthday theme had to pay homage to his beloved trucks.

The past three years I have made Georgie his birthday cake. A sugar free banana cake with cream cheese frosting which Georgie just loves. All I heard these past few weeks is, “Grandmom, when are you going to make my cake?” Today, Georgie got his wish and I got mine when I saw his big smile and giggle when he saw his truck birthday cake. Happy Birthday my love!

I found the best recipe from the following blogger, kristineskitchenblog.com. I made a few changes to the recipe.
Ingredients
For the Cake:
1 cup white whole wheat flour (I used organic all purpose flour)
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
⅛ teaspoon salt
1 medium ripe banana (about 3 ounces)
⅓ cup unsweetened applesauce (I used 4 oz unsweetened applesauce)
¼ cup milk (whole preferred)
¼ cup pure maple syrup (I omitted the syrup)
1 large egg
1 teaspoon vanilla pure extract (I used 3 teaspoons)

For Cream Cheese Frosting:
2 8 oz organic blocks of cream cheese
1 cup butter softened
3 teaspoons of pure vanilla extract
1 4 oz of unsweetened applesauce

Blueberry puree:
1 cup frozen blueberries
¼ cup water

Directions
Preheat oven to 350 degrees F.
I used the large aluminum LivyLu’s mold as well as the silicone medium size mold.
In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Set aside.
Place banana, applesauce, milk, and maple syrup in a blender and blend until smooth. Pour into a medium bowl or large liquid measuring cup. Whisk in the egg and vanilla.
Pour the wet ingredients into the bowl with the dry and mix with a rubber spatula or spoon until just combined. Be careful not to over mix it’s ok if there are a few bits of flour still visible in the batter.
Pour batter into the prepared molds. Bake for about 14-16 minutes, until a toothpick inserted into the center of the cake comes out clean.
Let cakes cool in the pans for 10 minutes. Then, gently run a knife around the edges and carefully transfer to wire racks to cool completely before frosting.

To Make Cream Cheese Frosting:
Using an electric mixer, beat the cream cheese, vanilla, applesauce & butter. Add a cup of the blueberry puree and whip until all is blended. Frost the cakes and decorate to your desire.
