I adore peaches for two reasons; it is my favorite summer fruit and it is an endearing name my five young nieces & I call each other. I think it started when I made them peach pancakes one morning for breakfast. Sleepovers at “Gins” has been a yearly tradition and continues to this day even though they are now in high school and college. Just love my “peaches”. 🙂
Mini Peach Cobblers- an original LivyLu’s recipe:
- 2- 3 ripe peaches cut into cubes
- 1 cup melted butter
- 1/4 cup sugar
- 1/4 cup light brown sugar
- 1/2 cup all purpose flour
- 1/2 cup steel cut oats – quick 3 minute
- 2 teaspoons of baking powder
- 1 teaspoon of cinnamon
Mix it all together in a large bowl and drop a scoopful into LivyLu’s silicone medium size mold. Bake for 25 -30 minutes until golden brown at 350 degrees. Serve warm with additional peach slices or, a nice dollop of whipped cream. Yum!!
