Yum, Banana Bites…

My daughter Livy, the original LivyLu, was intrigued by my peach cobbler recipe and decided to create her own version using bananas and applesauce. Of course, she used the “original” LivyLu’s baking mold made of aluminum casting as seen on QVC in 2007. Check out the baking molds on my website at www.aquamarine-falcon-606989.hostingersite.com.

Livy’s Banana Bites Recipe:

  • 2 large ripe bananas
  • 1 stick (1/2 cup)  + 2 tablespoons melted butter
  • 4 oz unsweetened applesauce
  • 1/2 cup all purpose flour
  • 1/2 cup rolled oats
  • 2 teaspoons of baking powder
  • 2 teaspoons of cinnamon

Mix it all together in a large bowl and drop a scoopful into LivyLu’s baking molds. You can use the medium size silicone, aluminum casting mold or the small casting mold for a true bite size. Bake for 35-40 minutes until golden brown at 350 degrees. Serve warm with a little butter. Yum!!
